On the Hell’s Kitchen episode ‘Don’t Tell My Fiancé’, before the contestants try to impress VIP guests like former Real Housewives of Beverly Hills star Adrienne Maloof, they must first impress chef Chris Hastings with their own version of a Southern staple.
Hastings is the owner and executive chef of Hot & Hot Fish Club and Ovenbird in Birmingham, Alabama. He is the 2012 winner of the James Beard Foundation “Best Chef in the South” Award. After graduating from the culinary arts program at Johnson & Wales University in Providence, he worked as a sous chef at the Ritz Carlton in Atlanta in 1984, and later at Lark Creek Inn in San Francisco. In 2015, Hastings opened The Side by Side restaurant in the Embassy Suites in Tuscaloosa, Alabama. He is the author of the Hot and Hot Fish Club Cookbook. Hell’s Kitchen airs Fridays at 8pm on FOX.
