On the reality TV show Food Fighters, a web-design manager from California faces off in culinary heats against established chefs. One of them is Eric Greenspan. Sure he’s the chef and owner of The Foundry and The Roof on Wilshire Boulevard in Los Angeles, but he can also make a sick grilled cheese sandwich. His grilled cheese sandwich, The Champ, is made with with taleggio cheese, raisin walnut bread, apricot caper puree, dried tomato, and beef short rib.
Greenspan serves The Champ and other sandwiches (you can design your own grilled cheese, too) at Spacecraft, a family-friendly restaurant in Los Angeles that also serves salads, hand-crafted sodas and Americana desserts. Food Fighters airs Thursdays at 8pm on NBC.
