In the Season 18 Hell’s Kitchen episode “Fish Out of Water,” the contestants are greeted by pianist-composer Stephan Moccio, and Chef Gordon Ramsay explains that like a great musician, great chefs must be versatile in a wide variety of cooking styles. During the challenge, each team is tasked with cooking halibut seven different ways.

The Canadian-born Moccio, 45, is known for co-writing and co-producing two songs on the Fifty Shades of Grey soundtrack: “Earned It” performed by The Weeknd and “I Know You” performed by Skylar Grey. Moccio is also known for co-writing Miley Cyrus’ hit song “Wrecking Ball” and Celine Dion’s “A New Day Has Come,” among others. More recently, Moccio co-wrote the song “Head Above Water” for Avril Lavigne; it’s her first single in five years. Lavigne, who has been fighting Lyme Disease, says she wrote the song “during one of the scariest moments of my life” and that at the time “I had accepted death and could feel my body shutting down.” Hell’s Kitchen airs Fridays at 9 pm on FOX.
