Third-generation cattleman David Alwan of Peoria, Illinois sells “old fashion butcher shop” quality meat. He started cutting meat when he was 11. The story goes he had to stand on a milk crate to reach the cutting table. In 1998, he started his own company. He got trained by the best in Germany and Denmark. These days he runs a virtual gourmet shopping market called Echo Valley Meats.
