This recipe for a lentil salad can use green or brown lentils as they do not lose shape with cooking. Before cooking lentils, remove any discolored ones and debris while rinsing under cold water. For a delicious salad add 1 ½ Cups lentils to a pot of boiling water. Turn water temperature down to a simmer and cook lentils approximately 30 min. While lentils are simmering dice 1 cup of red peppers, and ¼ cup diced red onion. Measure ½ cup of crumbled goat cheese, and 1 teaspoon of garlic powder. When lentils are done simmering, drain them and transfer to a large bowl. Stir in peppers, onion, goat cheese, garlic powder, add salt and pepper to taste. Dress with ¼ cup olive oil, 2 tablespoons of lemon juice. Allow to cool, garnish with chopped parsley before serving.
