Ice cream, a frozen treat made from dairy products, eggs, and sugar can be made in flavors ranging from peach to chocolate chip cookie dough. “Custard style” ice cream contains egg yolk and gives this dessert a smooth, rich flavor. France and Italy served milk ices in the 1500’s to the upper echelons of society. The American colonists shortened the name from iced cream to ice cream in 1776, and the first ice cream parlor opened in New York City. Ice cream provides protein, phosphorus, riboflavin, and calcium.
“Homemade Chocolate Chip Ice Cream” can be made with just these ingredients: 1 cup milk, 1 cup sugar, ½ teaspoon salt, 1 cup half-and-half, ½ tablespoon vanilla extract, 2 cups whipping cream, and 2 cups of chocolate chips. Boil milk in a saucepan and remove from heat, add sugar and salt to the hot milk and stir until dissolved. Add remaining ingredients and stir well. Pour into an airtight freezer container and allow mixture to cool for several hours. Once mixture has cooled, cover and keep refrigerated for at least four hours. Mixture can be cooled for up to 24 hrs. Place the container in the freezer for two hours. Remove from the freezer and beat with a fork, food processor or electric mixer to break up the ice crystals. Cover and freeze for two more hours and beat again. Mixture should be thick and soft. If not thick enough, return to freezer for one hour and beat once again. If mixture is thick, then it’s time to add in chocolate chips by hand and keep in airtight freezer container, cover and allow one more hour to freeze. Enjoy your all-natural ice cream.
