Kale is a super nutritious vegetable (also called borecole) in the cabbage family. It has dark green curly leaves with a slight bitter taste. Kale has chlorophyll that aids in cleansing the blood and enzymes that rejuvenate cells, as well as lutein for eye health and fiber to reduce the risk of heart disease. Kale is has vitamins K, C, A, B6, magnesium, folic acid, iron, and calcium.
Try this recipe for a kale salad, using sea salt and lemon juice on the kale to soften the leaves. You will need 1 head of kale rinsed and dried, 5 radishes sliced, ¼ shredded carrots, 1/3 cup of sliced almonds. Remove the kale leaves from the stems add to a large bowl with the remaining ingredients. For the dressing mix together ¼ cup olive oil, ¼ cup lemon juice, 1 tablespoon of soy sauce, ½ teaspoon of sea salt, ¼ cup water. Pour dressing over the salad and toss with your hands while massaging the dressing into the kale leaves to soften and flavor. Once mixed, add more salt & pepper to taste. Enjoy!
