Red leaf lettuce–with its pretty, ruffled leaves—is full of more nutrients and minerals than most lettuces. It is mild tasting and has lots of vitamins A and C. Look for it in the produce department measuring between 6-8 inches in length with muted red leaf tips.
For a quick and easy salad, chop up a head of red leaf lettuce, mix with one tablespoon of olive oil, one tablespoon of balsamic vinegar along with some salt and pepper. This makes a delicious simple salad to compliment any meal.
