It’s got pizza cheese as a topper and that makes it a kid-friendly masterpiece, really. The melted mozzarella gets added last for a quick broiler stop after the slow cooker does its swift work, but that only adds just a minute or two. Otherwise, we’re talking THREE ingredients and under two hours of cooking time. That’s the beauty of what we call CHIX2.0 — even the name has a video game-y, kid-friendly appeal. Here’s all you do:
Trim boneless chicken breasts and slice them in half. How many? As many as six, depending on the size of your slow cooker. Coat the cooker surface and sides with a nonstick spray and layer the bottom with chicken. Add salt and pepper. Grab a jar of salsa, drain it a little, then pour it on top of the chicken. Set the slow cooker on HIGH, and let it go for 90 minutes. (Could be a little less or a little more, depending on your slow cooker — just experiment.) Pull the chicken out and place in a casserole dish. Spoon some salsa from the slow cooker on top. Top with mozzarella and put under the broiler for a minute or two. Call the kids. Put some tortilla chips on the plate if you want them to come faster. Don’t tell them salsa has vegetables.
