On Season 6 episode of Bar Rescue, “Fish Out of Blue Water,” Jon Taffer travels to Jacksonville Beach, Florida to check out Blue Water Daiquiri and Oyster Bar. He brings rapper and DJ Lil Jon with him. You read that right. Taffer has known Lil Jon for the past 12 years. “We’ve met in nightclubs, time and time again,” says Taffer. So it’s not a stretch for Taffer to ask Lil Jon to do some recon at a bar that’s supposed to be a party bar but in reality isn’t seeing a lot of action. When Taffer makes his presence known at Blue Water Daiquiri and Oyster Bar, he prods the owner, a Chinese immigrant, to spend less time in the back office and to confront his emotional manager.
Taffer renovates the “party bar” and re-brands it as Sydney, an Australian Beach Club. The kitchen and dining areas have been renovated and the food and drink menu has been revamped. Sydney’s signature drink is called Shark Attack which is made of rum, and Sydney’s secret pineapple and citrus mix for $6.54. There are many Happy Hour specials including 69-cent oysters every Friday night. New episodes of Bar Rescue air Sundays at 10pm on Paramount Network.
